Holiday treats don't have to be unhealthy!
This collagen-rich eggnog recipe is deliciously sweet and creamy, and totally alcohol free so even the kids can try it.
We added in two scoops of our Gut Health Boost Collagen to this recipe, but any of our unflavored blends will work.

Ingredients:
Serves 2-3
- 1 Cup Heavy Cream (you can substitute coconut cream, which will change the flavor but it's still yum, in a tropical way!)
- 1.5 Cups Whole Milk (you can substitute plant milks eg almond, coconut etc, which will change the taste somewhat)
- 2 eggs (room temperature)
- 2 egg yolks (room temperature - keep the whites to make hard frosting for gingerbread cookies!)
- 1/4 Cup Sugar (or less to taste)
- 2 Scoops Gut Boost Collagen Powder
- 1 Teaspoon Vanilla Extract
- 1/2 Teaspoon Nutmeg (freshly grated if possible)
- Pinch of salt
- Optional to serve: Whipped Cream, Ground Cinnamon, extra Nutmeg.
Instructions:
1. Place Heavy Cream, Milk, and grated Nutmeg in a heavy based pan over a gentle heat.
2. Heat gently to below simmering point - do not allow it to boil!
3. While the cream mixture is heating, in a large bowl whisk together the Eggs, Egg Yolks, Sugar, Collagen, Vanilla Extract and a pinch of salt.
4. When cream mixture is hot, gradually pour 1/2 cup of the hot cream mixture into the egg mixture, whisking the whole time.
This is tempering the eggs. You may need to place a cloth under the bowl to keep it steady.
5. Add another 1/2 cup of the hot cream mixture to the egg mixture slowly, whisking all the time.
7. Now pour the egg mixture into the pan, gradually and slowly, whisking all the time.
8. Put the pan back on a gentle heat, whisking the whole time.
9. Keep whisking until the eggnog is thick and smooth and coats the back of a spoon.
(Don't worry if it looks grainy or separates - pour into a bowl and whisk briskly, or blend until it looks right)
10. Let the eggnog chill (Or drink warm if you like!)
11. Serve in small glasses, topped with whipped cream, ground cinnamon and grated nutmeg.
